Apple & Parsnip Soup


10oz Parsnips

10oz Apples

2oz Butter

2 Pints vegetable stock

Cream to taste

Salt & Pepper


Cook apples & Parsnips in butter until soft but not coloured.

Add stock, bring to boil and simmer for 45 minutes.

Liquidise.

Thicken with a little flour if necessary.

Add cream to taste just before serving.
