Citrus Cake



8 oz plain flour

pinch of salt

4 oz margarine

4 oz caster sugar

2 eggs

2 tbsp milk

4 oz coarsely cut candied peel

2 oz broken sugar honeycomb

1 tsp orange oil


Pre heat the oven to Gas Mark 4.

Grease and line an 8” cake tin.

Mix the flour and salt then rub in the fat.

Stir the sugar, peel and honeycomb into the flour mixture.

Beat together the eggs, milk and orange oil.

Add the egg mixture to the flour and peel mixture and mix together gently.

Turn the mixture into the tin.

Bake just below the middle of the oven for about an hour and  a quarter.
