Farmhouse Sultana Cake



1 Lb Self Raising Flour

Half teaspoon of salt

8 oz Butter or block margarine

8 oz caster sugar

4 large eggs

4 scant tablespoons milk

12 oz Golden Sultanas

3 tablespoons Muscat or other Dessert wine

1 or 2 tablespoons unrefined granulated sugar


Preheat the oven to Gas Mark 4.

Grease and line a 12” cake tin.

PLace the sultanas in a small dish or bowl and sprinkle the wine over them. Replace lid or cover with cling film then leave to steep for at least 2 hours.

Place the flour and salt into a mixing bowl.

Cut the fat into small cubes and add to the bowl.

Rub the fat into the flour.

Add the caster sugar and stir in.

Add the Sultanas to the bowl and stir in.

Beat the eggs and milk together and then mix into the dry ingredients until you have a stiffish, smooth, dough.

Turn into the prepared tin and smooth the top if the mixture with the back of a spoon, then sprinkle over 1 to 2 tablespoons of unrefined granulated sugar before baking just below the centre of the oven for about 1 hour and 20 minutes.
