Fruit, Brandy & Spice cake

 

Ingredients:


12 oz Plain Flour

2 tsp baking powder

8 oz margarine

6 oz caster sugar

4 eggs at room temperature

2 Lbs ‘Grandma’s mincemeat

2 Tbsp brandy

1 tsp ground nutmeg


Method:


Pre heat the oven to Gas Mark 3.5


Grease and line a 9” tin.



Cream the fat and sugar until light and fluffy.


Sift together the flour, baking powder and nutmeg


Beat the eggs and brandy then add to the creamed mixture a tablespoon at a time, alternating with tablespoons of flour.


Flood in the remaining flour, then fold in the mincemeat.


Turn into the prepared tin and level off with the back of a spoon.


Bake for about 1 and three-quarter hours in the centre of the oven.
