Gooseberry Jam




4 Lbs Gooseberries

2 pints strong elderflower cordial (approx 1 part cordial to 3 parts water)

6 Lbs preserving sugar



Top & Tail gooseberries.

Rinse and place in Maslin.

Cover with Elderflower cordial.

Bring to boil slowly and simmer gently for about 10 mins.

Stir in sugar, I bag at a time, until fully dissolved.

Bring to a rapid boil.

Boil for approximately 45 mins until a set is achieved.

(start testing each 5 mins after 40 mins).

Bottle in usual way.

Makes approximately 12 Lbs of Jam.
