Mrs. Lipton’s Most Excellent Cherry Cake



12 oz Self Raising Flour

Pinch of salt

6 oz Butter or block margarine

6 oz caster sugar

3 large eggs

3 scant tablespoons milk

9 oz whole glace cherries


Preheat the oven to Gas Mark 4.

Grease and line a 7” cake tin.

Place the flour and salt into a mixing bowl.

Cut the fat into small cubes and add to the bowl.

Rub the fat into the flour.

Add the caster sugar and stir in.

Toss the cherries in a tablespoon of the flour mixture - until they are coated - then add to the bowl and stir in.

Beat the eggs and milk together and then mix into the dry ingredients until you have a stiffish, smooth, dough.

Turn into the prepared tin and bake just below the centre of the oven for about 1 hour and 20 minutes.

Who is Mrs. Lipton?

There probably is a Mrs. Lipton, somewhere, who makes cherry cakes, but I have no idea who or where she is.

This is an adaptation of the Be-Ro fruit cake recipe which happens to turn out a lovely domed shape, just like the cakes which were featured on the Servants’ table in every episode of “You Rang M’Lord?”, and which were always referred to as “Mrs. Lipton’s Most Excellent Cherry Cake”.
